Chilled Vanilla Rice Pudding With Figs Recipe

Ingredients
  • 1 c Plain yogurt
  • 1 c Packed fresh basil leaves; sliced fine
  • 1 ts Curry powder
  • 3 lb Tomatoes; , cored and cut into chunks

Directions
  • Step #1 In a food processor/blender or mixer pure the tomatoes in batches, & whisk in the yogurt, the basil, force the pure through a fine sieve set over a bowl, the curry powder, & salt & pepper to taste.
  • Step #2 Chill the soup, covered, until it is cold.
  • Step #3 (The soup may be made 1 day in advance & kept covered & chilled).
  • Step #4 Makes about 5 c, serving 4.
