Ingredients
  • 3 lg Yellow bell peppers; , sliced
  • 2 c Buttermilk
  • 3 bn Scallions
  • 1 tb Vegetable oil
  • 3 c Water

Directions
  • Step #1 Chop white & pale green parts of scallions & slice greens thin.
  • Step #2 In a large heavy saucepan cook sliced scallions & bell peppers in oil over moderately low heat, stirring every once in awhile, until softened.
  • Step #3 Add water & let simmer 15 mins, or until peppers are tender.
  • Step #4 In a mixer puree mixture & in a bowl stir this together puree, buttermilk, scallion greens, & salt & pepper to taste.
  • Step #5 Chill soup, covered.
  • Step #6 Soup may be made 1 day ahead & chilled, covered.
  • Step #7 Makes about 6 c.
