Chilli Oil Recipe

Ingredients
  • 2 Eggs; lightly beaten
  • 1/2 c Sugar onion; finely sliced
  • 250 g Prawns;
  • 250 g Pork or chicken; finely sliced
  • 1/2 c Fresh coriander; sliced
  • 4 c Cold; cooked rice
  • 3 tb Light oil
  • 1 tb Chilli sauce
  • 2 tb Asian fish sauce
  • 1 tb Light soy sauce
  • 1 ts Sugar
  • 2 Cloves garlic; sliced finely
  • 1 tb Lime juice
  • 2 md Onions; finely sliced
  • 2 Fresh chilli; 1 red & 1 green, finely sliced

Directions
  • Step #1 Steps: carefully fry onion, chillies & garlic until soft but not brown.
  • Step #2 Add chicken or pork & turn up the heat, toss until cooked.
  • Step #3 Add the sliced prawns, toss to cook & then add rice.
  • Step #4 cook this until heated through.
  • Step #5 Beat the eggs together with the soy sauce & a grind or two of fresh pepper.
  • Step #6 Push the rice to the side of the wok & pour the egg into the base of the wok, stir until set.
  • Step #7 With your spatula, cut the egg into strips.
  • Step #8 Mix together the fish sauce, sugar, chilli sauce & lime juice and pour over the rice.
  • Step #9 Toss all together for about one min.
  • Step #10 Add the sliced coriander & spring onion & toss through.
  • Step #11 Serve garnished with sliced chilli.
