Chilli Sweetcorn Muffins Recipe

Ingredients
  • 1 Fresh red chillies; minced
  • 2 Bay leaves
  • 600 g Sugar
  • 1 Red capsicum; sliced
  • 2 Spanish; onion, sliced
  • 6 Shallots; peeled & sliced
  • 8 Ears corn
  • 1 tb Fennel seeds
  • 2 tb Yellow mustard seeds
  • 1 md Cucumber; peeled & sliced
  • 1 Green capsicum; sliced
  • 3 Cloves garlic; peeled and minced
  • 800 ml Brown vinegar
  • 1 tb Olive oil
  • 8 Roma tomatoes; sliced

Directions
  • Step #1 Heat the olive oil & add the chilli, mustard seeds, fennel seeds & bay leaves & stir briefly until aromatic.
  • Step #2 Add the sliced onion, sliced shallots & minced garlic & saute for a few mins while stirring to incorporate all the ingredients.
  • Step #3 Meanwhile, cut all the corn off the cobs.
  • Step #4 Add the corn, tomatoes, cucumber, capsicums, sugar & vinegar and bring to the boil.
  • Step #5 Simmer the mixture for one hr, stirring regularly, until the mixture is thick & glossy.
  • Step #6 Pour the relish into hot sterile glass jars & seal.
  • Step #7 allow this to cool thoroughly then store this in a cool dark place for up to 2 years.
