Cream Of Asparagus Soupi Recipe

Ingredients
  • 3 1/2 c chicken broth
  • 1/2 c half-and-half
  • 1/4 c all-purpose flour
  • 1/4 c margarine
  • 1/2 tsp salt
  • 1 lb fresh asparagus
  • 1/8 tsp ground black pepper

Directions
  • Step #1 Trim the coarse ends of the asparagus & cut asparagus into one inch pieces.
  • Step #2 In a medium skillet over medium high heat, saute the asparagus in 1 c of the broth for about 7 mins, or until tender.
  • Step #3 In a large saucepan over medium high heat, melt the butter or margarine & remove this from heat.
  • Step #4 Add the flour & stir well until smooth.
  • Step #5 Gradually add the remaining 2 1/2 c broth.
  • Step #6 Return the saucepan to the heat & continue to cook, stirring every once in awhile, until slightly thickened.
  • Step #7 Add the half-and-half, salt, pepper & cooked asparagus with liquid.
  • Step #8 Stir well & heat thoroughly.
  • Step #9 Serve hot & enjoy!.
