Chinese Beef Noodle Soup Recipe

Ingredients
  • 1 1/2 ts Dark sesame oil
  • 1 ts Minced garlic
  • 1/2 c Minced scallions
  • 1 lb Lean chuck roast trimmed of fat; cut in 2" cubes
  • 1 ts Cornstarch
  • 1 c Unsweetened pineapple juice
  • 1 tb Water
  • 1 tb Packed brown sugar
  • 8 oz Carrots; sliced
  • 1 c sliced onions
  • 1/2 ts Grated fresh ginger
  • 8 oz Spaghetti
  • 1 tb Reduced-sodium soy sauce
  • 1 ts Dry mustard

Directions
  • Step #1 In a shallow nonmetal dish, mix the pineapple juice, soy sauce, brown sugar, & mustard.
  • Step #2 Mix well.
  • Step #3 Add the beef & mix well.
  • Step #4 Cover & put in the fridge for 1 hr, stirring every once in awhile.
  • Step #5 Coat a 10" no-stick skillet with no-stick spray & place over medium-high heat.
  • Step #6 Add the oil & heat until hot.
  • Step #7 Add the onions, garlic, carrots, & ginger.
  • Step #8 Cook, stirring, for 5 mins or until the onions are soft but not browned.
  • Step #9 Add the beef mixture.
  • Step #10 Cook, for 10 mins, stirring, or until the beef is no longer pink in the center.
  • Step #11 Check by inserting the tip of a sharp knife into 1 cube.
  • Step #12 Cook the spaghetti in a large pot of boiling water according to the package directions.
  • Step #13 Drain well.
  • Step #14 Place the cornstarch in a c.
  • Step #15 Add the water & stir until smooth.
  • Step #16 Add to the skillet.
  • Step #17 Cook, for 2 to 3 mins, stirring, or until the sauce thickens.
  • Step #18 Add the spaghetti & scallions; toss well.
  • Step #19 Cover and cook for 1 min, or until the spaghetti is hot.
  • Step #20 To freeze, pack the Cooled cooked beef & spaghetti in a freezer-quality plastic container.
  • Step #21 To use, thaw overnight in the refrigerator.
  • Step #22 Cover & microwave on high power for 5 mins, or until hot.
