Step #2 mix the chicken bones, rice wine, water, & ginger in a large pot & bring to a boil.
Step #3 Reduce heat to low & let simmer, uncovered, for 1 1/2 hrs.
Step #4 Skimming the surface to remove any foam or impurities.
