Ingredients
1/4 c Olive Oil
1/2 ts Salt
2 ts Anise Pepper
2 Hot Peppers; your choice,
1/2 c Chicken Broth
1 tb Granulated Sugar
3 tb Soy Sauce; divided
2 tb Rice Wine Vinegar
1 tb Fresh Ginger; grated
1 tb Sherry
2 lb Chicken Breasts; sliced into bite-size pieces
1 Scallion or Green Onion
1 tb Cornstarch
Directions
Step #1 Marinate the prepared & cut chicken for 15 to 20 mins in a mixture of fresh ginger, sherry, & two tbsps of the soy sauce.
Step #2 Meanwhile, cut the scallion & hot peppers diagonally into 1-inch pieces.
Step #3 Grind the anise pepper to a powder with a mortar & pestle; reserve.
Step #4 In a large skillet over medium-high heat, saut? the prepared scallion & peppers in the olive oil for a few mins to soften.
Step #5 Add the chicken with its marinade to the skillet & begin to brown it with the vegetables, stir-fry style.
Step #6 When partially cooked, sugar, add the rice wine vinegar, salt, & anise pepper.
Step #7 Continue to stir-fry a few mins more.
Step #8 Add the chicken broth & mix well.
Step #9 Cover the skillet & continue to cook over a low heat setting until the chicken is tender, about 20 to 30 mins.
Step #10 mix the cornstarch with a bit of water & the rest of the soy sauce, & add to the skillet.
Step #11 Stir carefully until thickened, about 10 mins more.
Step #12 Serve warm.
Step #13 Great with plain rice or oriental noodles.
