Step #1 Marinade: 1 c soy sauce 1/2 c sherry 1/2 c brown sugar 1 tsp salt 1/8 tsp black pepper 1/8 tsp MSG 1 medium onion, sliced 2 cloves garlic Saute onions & garlic in a little oil.
Step #2 In a mixing bowl, add sauted onions, garlic & other marinade ingredients & mix well.
Step #3 Place pork in glass baking dish & pour marinade over meat.
Step #4 Marinate pork in refrigerator a minimum of 3 hrs, overnight is better.
Step #5 preheat your trusty oven to 400F.
Step #6 Remove pork from marinade & heat marinade in sauce pan to boiling.
Step #7 remove this from heat.
Step #8 Put pork on middle rack of oven with drip pan underneath roast to catch drippings.
Step #9 Put about 1/2 c of water into pan.
Step #10 Sear pork at 400F for 10 mins.
Step #11 Reduce heat to 250F & roast for 2-3 hrs until internal temperature of pork reaches 155F.
Step #12 Baste every 30 mins with marinade.
Step #13 Use instant reading thermometer with thin probe.
Step #14 DO NOT overcook.
Step #15 The pork roast will continue to cook for a few mins after it is removed from the oven.
Step #16 Keep about 1/4 c of water in drip pan.
Step #17 Remove & deglaze drip pan with water.
Step #18 In pan, add more water to make 1 c of liquid.
Step #19 Thicken with 1 tbsp of corn starch and simmer gravy until thickened.
Step #20 Salt to taste.
Step #21 Slice & serve as soon as possible after removing from oven.
