Step #1 ENCEBOLLADO--- 3 c Sliced white onions 2 tb Sliced garlic 1/4 c Olive oil 1/4 c sliced cilantro 2 tb Lime juice mix chipotle, cumin, roasted garlic, steak sauce, & salt and pepper in a mixing bowl mix well.
Step #2 Add the rib-eye & cover with the marinade, allow to sit at least 1 hr, as long as, overnight.
Step #3 For the encebollado heat a large saute pan over med-heat/flame & add the onions, garlic & oil.
Step #4 Cook for about 15 mins or until the onions have caramelized.
Step #5 Add the cilantro & lime juice & set aside.
Step #6 Keep warm.
Step #7 Grill the rib-eye steak to your preferred degree of doneness and serve this with the encebollado on top.
