Chocolate Almond Biscotti Recipe

Ingredients
  • 1/3 c Cocoa
  • 2 c All purpose flour
  • 4 Extra large eggs at room temperature
  • 1/2 ts Almond extract
  • 1 c Slivered almonds
  • 2 ts Vanilla
  • 1 1/4 c Sugar

Directions
  • Step #1 preheat your trusty oven to 375D.
  • Step #2 Lightly grease & flour two baking sheets, set aside.
  • Step #3 mix eggs & sugar in mixer bowl & beat on high speed for 10 mins.
  • Step #4 Scrape bowl often.
  • Step #5 Add extracts.
  • Step #6 Sift flour and cocoa.
  • Step #7 Reduce mixer speed to ow & carefully fold in flour mixture.
  • Step #8 Add almonds.
  • Step #9 Do not overmix.
  • Step #10 Spread half of batter on each pan & form a fat loaf shape about 15 inches long by 5 1/2 inches wide rounded at the edges.
  • Step #11 Bake 25 mins or until crusted & dull on top.
  • Step #12 With broad spatula, transfer loaves to rack & cool 30 mins.
  • Step #13 Then, with serrated knife, cut each loaf into 16 slices.
  • Step #14 Arrange sliced in single layer on ungreased cookie sheets.
  • Step #15 Returen to oven & bake 7 to 10 minutse.
  • Step #16 Turn & bake another 7 to 10 minuts or until biscotti are very crisp.
  • Step #17 Cool on rack to room temp, then store this in airtight container up to 3 weeks.
