Step #1 ---SYRUP------ 1 Nectarine 2 oz Brown sugar 2 oz Butter 2 Shots brandy 1 pn Cinnamon 1 Sprig mint for garnish Whisk egg yolks & sugar in a bowl over a pan of hot water (being careful it doesn't curdle).
Step #2 Melt the chocolate in a bowl in the microwave or in a glass bowl over a pan of boiling water until the chocolate has melted.
Step #3 Warm the cream through in a pan (just below boiling point).
Step #4 Pour the cream onto the egg & sugar mixture & whisk.
Step #5 Add the sliced walnuts.
Step #6 Put back into a pan over the water for a few more mins.
Step #7 Pour in the melted chocolate & place this into a shallow dish.
Step #8 place this in the freezer for about 2 hrs or until frozen.
Step #9 Place the nectarines into boiling water for about 2-3 mins or until the skin is soft & easily comes away.
Step #10 Roughly dice the flesh of the nectarine.
Step #11 Melt the butter in a small frying or omelette pan.
Step #12 Add brown sugar & shake around the pan.
Step #13 Add the nectarine and brandy.
Step #14 Tilt so that the fumes from the brandy ignite.
Step #15 Decorate the plate with the hot nectarine & ice cream.
