Chocolate Bubble Bread Recipe

Ingredients
  • 2 lg Eggs
  • 70 g Unsifted flour;
  • 225 g Granulated sugar;
  • 1 ts Vanilla essence
  • 3 tb Cocoa powder
  • 110 g Unsalted butter;
  • 1/4 ts Baking powder
  • 110 g Walnuts; broken into large pieces
  • 1/4 ts Salt

Directions
  • Step #1 Preheat the oven to 180?C/350?F/gas mark 4.
  • Step #2 Line a 9 inch square cake tin with foil, shiny side down & butter the foil well.
  • Step #3 Set the tin aside.
  • Step #4 Sift the flour, baking powder, cocoa, salt & set aside.
  • Step #5 Melt the butter in a large heavy based saucepan over a moderate heat.
  • Step #6 remove this from the heat & stir in the the sugar & vanilla, then the eggs ?one at a time.
  • Step #7 Now stir in the the sifted dry ingredients & then the nuts.
  • Step #8 Spread smoothly into the prepared tin.
  • Step #9 Bake for 20?25 mins until a skewer inserted in the middle just barely comes out clean.
  • Step #10 Cool in the pan for 15 mintues.
  • Step #11 Then turn out onto a cooling rack.
  • Step #12 Remove the pan & the foil lining & let it rest until it is cool.
  • Step #13 Cut the brownies into 16 squares.
