Chocolate Butter-cream Frosting Recipe

Ingredients
  • 25 g Bournville cocoa;
  • Flavouring;
  • 175 g Butter or soft margarine;
  • 250 G; icing, sugar, sifted
  • 60 ml Boiling water;

Directions
  • Step #1 Dissolve the cocoa in the boiling water, making a paste.
  • Step #2 Cream the fat to soften it, then add the icing sugar & beat really well until the mixture becomes pale in colour & light in texture.
  • Step #3 (An electric mixer is helpful).
  • Step #4 Mix in the cooled cocoa.
  • Step #5 extra flavouring of vanilla or peppermint essence, dissolved instant coffee or the finely grated rind of half an orange may be added.
  • Step #6 store this in a covered container in the refrigerator or freezer.
  • Step #7 The quantity of butter icing given in the recipes refers to the weight of butter & sugar added together.
  • Step #8 This recipe makes enough butter icing to fill & decorate a 20cm (8 inch) sponge cake.
  • Step #9 Plain Butter Icing - Used For Halloween Magic Omit the Bournville Cocoa & make as above, adding a few drops of vanilla essence.
  • Step #10 Add grated lemon rind & a little juice instead of the vanilla essence to make lemon butter icing.
