Chocolate Caramel Popcorn Recipe

Ingredients
  • CAKE
  • 4 tb BUTTER, melted
  • 4 JUMBO EGGS, out of shell and warmed in
  • Microwave 1-1/2 mins.
  • bake this at 350-degrees for 10 mins.
  • 24 oz CREAM CHEESE, unwrapped and warmed in
  • 1 lb CARAMELS
  • remove this from oven & place a pan of water on the bottom
  • 2/3 c SEMI-SWEET CHOCOLATE PIECES, melted
  • 1 ts VANILLA
  • 1 1/2 c PECANS, sliced & toasted
  • Microwave 20 seconds on high
  • 1 1/2 pk GRAHAM CRACKERS, crushed
  • 2/3 c SUGAR
  • 1/3 c SUGAR
  • Mix & pat into bottoms and sides of 10" springform pan.
  • 1 can EVAPORATED MILK
  • Shelf.

Directions
  • Step #1 Melt caramels in milk (works best in microwave) stir in the pecans and pour over crust.
  • Step #2 Beat cheese until light.
  • Step #3 Add sugar & beat again.
  • Step #4 Add eggs, one at a time, beating after each.
  • Step #5 Mix in chocolate, then vanilla.
  • Step #6 Pour over caramels/pecans in pan.
  • Step #7 bake this at 350-degrees for 1 hr or so until firm on edges & stiff somewhat soft in middle.
  • Step #8 Cool to room temp & put in the fridge for several hrs.
  • Step #9 Drizzle with caramel sauce (you can use the ice cream topping variety or melt more caramels (with evaporated milk).
  • Step #10 Garnish with pecan halves.
  • Step #11 If you REAllY want it rich drizzle also with fudge sauce!.
