Chocolate Cheesecake With Fig Crust Recipe

Ingredients
  • 11 oz Mandarin Orange Sections
  • 1 pk German Chocolate cake mix
  • 1/2 c Whipping Cream
  • 8 oz Cream Cheese; softened
  • 1/2 ts Finely Shredded Lemon Peel
  • 1 c Sugar
  • 2 Egg Yolks
  • 1 tb Lemon Juice
  • 2 Egg Whites
  • Powdered Sugar
  • 1 pk Unflavored Gelatin

Directions
  • Step #1 Prepare cake mix according to package directions.
  • Step #2 pour this into 2 greased & lightly floured 9 x 1 1/2-inch round baking pans.
  • Step #3 bake this at 350~F till wooden pick inserted in center comes out clean, 25 to 30 mins.
  • Step #4 Cool on wire racks for 10 mins.
  • Step #5 remove this from pans; cool thoroughly.
  • Step #6 Drain mandarin orange sections, reserving 1/4 c syrup.
  • Step #7 Chop orange sections; set aside.
  • Step #8 Soften unflavored gelatin in the reserved 1/4 c mandarin orange syrup.
  • Step #9 Place over hot water & stir to dissolve.
  • Step #10 Cool slightly.
  • Step #11 Beat together cream cheese & sugar.
  • Step #12 Beat in egg yolks, lemon peel, & juice.
  • Step #13 stir in the cooled gelatin.
  • Step #14 Beat egg whites till stiff peaks form.
  • Step #15 Whip cream.
  • Step #16 Fold beaten egg whites, whipped cream, & sliced oranges into gelatin mixture.
  • Step #17 Turn into an 8 x 1 1/2-inch round baking pan.
  • Step #18 Chill till set.
  • Step #19 Unmold onto bottom cake layer.
  • Step #20 Cover with second cake layer.
  • Step #21 Sift powdered sugar over top.
