Chocolate Chip Oatmeal Cookies Recipe

Ingredients
  • 1 pk Semisweet chocolate chips;
  • 3/4 c Firmly packed dark brown sugar
  • 1 c Old-fashioned oats
  • 1 pk Vanilla instant pudding mix;
  • 2 Eggs
  • 3/4 c Sugar
  • 1/2 c Unsalted butter; room temperature
  • 1 ts Baking soda
  • 1/2 ts Salt
  • 1/2 c Solid vegetable shortening
  • 1/2 ts Ground nutmeg
  • 1 ts Water
  • 1 tb Vanilla extract
  • 1 1/2 c sliced walnuts;
  • 1 ts Ground cinnamon
  • 2 1/4 c All purpose flour

Directions
  • Step #1 preheat your trusty oven to 375F.
  • Step #2 Butter heavy large cookie sheets.
  • Step #3 Beat vegetable shortening & unsalted butter in large bowl until light.
  • Step #4 slowly add white & brown sugars & beat mixture until fluffy.
  • Step #5 Add eggs 1 at a time, beating well after each addition.
  • Step #6 Add vanilla pudding mix, vanilla extract, water, ground cinnamon, baking soda, ground nutmeg & salt & mix until well mixed.
  • Step #7 Mix in oats, then flour.
  • Step #8 stir in the chocolate chips & walnuts.
  • Step #9 Drop cookie dough by large rounded spoonfuls (about 3 tbsps each) onto prepared cookie sheets, spacing 2 inches apart.
  • Step #10 bake this until cookies appear dry & tops are lightly cracked & soft when pressed, about 12 mins (do not overbake).
  • Step #11 Cool cookies 5 mins on cookie sheets.
  • Step #12 Transfer cookies to racks & cool.
  • Step #13 (Store cookies in airtight container.
