Chocolate Covered Cherry Cookies Recipe

Ingredients
  • 12 oz Chocolate chips
  • 1 Egg white
  • 2 Squares bitter chocolate
  • 1 ts Vanilla
  • Lots of powdered sugar
  • 1 pn Salt
  • 2 Jars Maraschino cherries; (drained, then
  • 4 tb Melted paraffin

Directions
  • Step #1 Cherries: It is easier to handle the cherries if they are frozen first, but not necessary.
  • Step #2 Beat the egg white until fluffy.
  • Step #3 Add vanilla, salt & enough powdered sugar to make a stiff dough.
  • Step #4 Beat with mixer until very stiff.
  • Step #5 Knead like bread dough.
  • Step #6 Wrap the cherries with sugar mixture & put on buttered wax paper over a cookie sheet.
  • Step #7 Chill or, better yet, put in freezer.
  • Step #8 Chocolate Dip: Melt bitter chocolate & chocolate chips over hot water in double boiler.
  • Step #9 Add paraffin.
  • Step #10 Keep dip over hot water while dipping.
  • Step #11 Dip cherries.
  • Step #12 The stems can be left on for a handle or use a toothpick.
  • Step #13 Let drain & eat them.
