Chocolate Delight Recipe

Ingredients
  • 12 oz Bittersweet chocolate; Ghirardelli
  • 1 pn Salt
  • 1/2 c Sugar
  • 8 Eggs; separated
  • 1 ts Vanilla
  • 1/2 c Butter

Directions
  • Step #1 DIRECTIONS: In heavy saucepan, melt broken chocolate with butter, stirring constantly until smooth.
  • Step #2 (Or microwave on medium for 2 1/2 to 3 mins; stir until smooth.
  • Step #3 ) Beat egg yolks a few mins with 2 Tbsp of the sugar & vanilla.
  • Step #4 Remove melted chocolate from heat; using wire whip, quickly stir in the beaten egg yolks.
  • Step #5 Beat egg whites with salt, slowly adding remaining sugar, beating until soft peaks form.
  • Step #6 Place chocolate mixture into a large bowl with beaten egg whites on top.
  • Step #7 Using wire whip carefully mix the two mixtures.
  • Step #8 Do not over mix.
  • Step #9 Cut parchment paper to fit bottom of a 9" spring form pan.
  • Step #10 Butter bottom of pan & top of paper.
  • Step #11 Spread batter into prepared pan.
  • Step #12 Bake on lower shelf of 350-F oven for 30-35 mins until cracked on top & a toothpick comes out clean in center.
  • Step #13 Cool on wire rack.
  • Step #14 Cake will shrink down as it cools.
  • Step #15 Remove pan & loosen cake from paper.
  • Step #16 top this with either Dark Chocolate Glaze or Whipped Cream Frosting with Raspberry Sauce.
  • Step #17 For chocolate-glazed cake, trim top straight, and turn cake upside down on a flat cake plate.
  • Step #18 For Whipped Cream Frosting, place cake top side up.
  • Step #19 Separate recipe.
