Cilantro Chicken And Rice Recipe

Ingredients
  • 1 (10 oz) package yellow rice
  • 1 red bell pepper, sliced
  • 1 (4 oz) can sliced green chile peppers, drained
  • 1/2 c all-purpose flour
  • 1 medium onion, sliced
  • 1 (15 oz) can pinto beans, drained & rinsed
  • 1/2 tsp pepper
  • 1/4 tsp ground cayenne pepper
  • 2 c chicken broth
  • 3/4 c coarsely sliced fresh cilantro
  • 8 skinless, boneless chicken breast halves
  • 1 (28 oz) can stewed tomatoes
  • 1 (15 oz) can black beans, drained & rinsed
  • 1 (15 oz) can whole kernel corn, drained
  • 1 tsp salt
  • 1/4 c olive oil
  • 4 cloves garlic, minced

Directions
  • Step #1 Heat the olive oil in a large skillet over med-heat/flame.
  • Step #2 Dredge chicken in flour to coat.
  • Step #3 Place chicken in the skillet, & cook just until browned on all sides; set aside.
  • Step #4 Stir onion, bell pepper, & garlic into the skillet.
  • Step #5 Cook 5 mins, until tender.
  • Step #6 Pour in chicken broth.
  • Step #7 Mix in the yellow rice, corn, stewed tomatoes, black beans, pinto beans, sliced green chile peppers, & cilantro.
  • Step #8 Spice up with salt, pepper, & cayenne pepper.
  • Step #9 Bring to a boil.
  • Step #10 Return chicken to skillet.
  • Step #11 Reduce heat to low, & let simmer 30 mins, cover, until rice is tender & chicken juices run clear.
