Chocolate Espresso Pudding Cake Recipe

Ingredients
  • 200 g Baking chocolate
  • 2 tb Strong espresso coffee
  • 150 g Butter
  • 100 g Ground almonds;
  • 5 Eggs; separated
  • 150 g Caster sugar

Directions
  • Step #1 Pre-heat oven to 180 C.
  • Step #2 Prepare a 22cm tin by lightly buttering it, then shake a thin film of flour around the tin & discard any excess.
  • Step #3 mix the coffee, sugar & butter in a small bowl & heat in microwave for 2 mins until the butter has melted.
  • Step #4 Add sliced chocolate & stir until smooth & mixed.
  • Step #5 remove this from heat & add ground nuts.
  • Step #6 Mix well then beat in egg yolks one at a time.
  • Step #7 In another bowl beat egg whites until stiff.
  • Step #8 stir in the a couple of spoonfuls into the chocolate mix to lighten the mixture then fold into the rest of the mix.
  • Step #9 Turn into the cake tin.
  • Step #10 Bake for 40-50 mins until a skewer comes out clean from the centre of the cake.
  • Step #11 Leave to cool in the tin & don’t worry if the crust collapses – this is normal!.
