Chocolate Ganache Recipe

Ingredients
  • 2/3 c Heavy Cream
  • Few Grains Salt
  • 1 tb Mocha Java; coarsely ground
  • 1 Vanilla Bean
  • 2 ts Cognac
  • 2 ts Kahlua
  • 1 oz Milk Chocolate;
  • 8 oz Bittersweet Chocolate;
  • 1/2 tb Unsalted Butter

Directions
  • Step #1 Split the vanilla bean lengthwise & add it to the cream, together with the salt & ground coffee.
  • Step #2 Bring to a gentle boil, then continue boiing for one min.
  • Step #3 remove this from heat & let sit a couple mins, then strain through a fine sieve into a mixing bowl.
  • Step #4 Melt the chocolate (carefully).
  • Step #5 I use a double boiler, which is dicey enough.
  • Step #6 DO NOT use direct heat.
  • Step #7 Add the melted chocolate to the hot cream & whisk to mix.
  • Step #8 Add the liqueurs & mix, then add the butter & mix.
  • Step #9 If this is to be used for truffles, you need to freeze it overnight.
  • Step #10 For any other purpose, like a cake filling, I'd still put in the fridge it a good bit to let it firm up.
  • Step #11 Here's one I use for truffles.
  • Step #12 If you don't like coffee/mocha, omit the beans & substitute Cognac for the Kahlua.
