Chocolate Ganache Icing Recipe

Ingredients
  • 1 Vanilla bean
  • 4 oz Quality chocolate; sliced
  • 1/3 c Sugar
  • Whipped cream; garnish
  • 6 lg Eggs; separated
  • 1/2 c Bay leaf sauce
  • 4 Fresh bay leaves -or 1 dried bay leaf -Chocolate Sauce--
  • 7 oz Bittersweet chocolate
  • 1/2 c Heavy whipping cream
  • 6 tb Slivered almonds -ground into fine powder w/ food process 6 tb Cake flour
  • 12 oz Chocolate bar -cut in 12 1" square pieces -Bay Leaf Sauce--
  • 1/2 c Water
  • 1 c Sugar
  • 7 tb Soft butter

Directions
  • Step #1 Spray inside of each oversize (3-1/2-inch diameter) muffin c with butter-flavored vegetable oil spray; dust each c with cocoa powder.
  • Step #2 Set aside.
  • Step #3 Melt chocolate in top of double boiler over simmering water.
  • Step #4 Whisk in soft butter.
  • Step #5 Remove chocolate mixture & whisk in egg yolks, one at a time.
  • Step #6 Set aside.
  • Step #7 Whisk ground almonds & cake flour together & fold into chocolate mixture.
  • Step #8 Set aside.
  • Step #9 Whip egg whites & sugar with whisk or electric mixer into soft peaks.
  • Step #10 Whisk 1/3 of egg white mixture into chocolate mixture.
  • Step #11 Fold in remaining egg whites in 2 additions.
  • Step #12 Spoon batter into each muffin c to a depth of 1/2-inch.
  • Step #13 Freeze approximately 5 mins until batter stiffens.
  • Step #14 Put a 1-inch piece of chocolate in center of each muffin c on top of cake batter.
  • Step #15 Spoon in enough cake batter to cover chocolate pieces.
  • Step #16 bake this at 350 degrees F 20 mins.
  • Step #17 Allow cake to rest in pan for 1 min.
  • Step #18 Carefully remove cakes to 12 individual dessert plates.
  • Step #19 serve this with Bay Leaf Chocolate Sauce & whipped cream.
  • Step #20 12 servings.
  • Step #21 Bay Leaf Sauce: Boil sugar & water in small saucepan over medium-high heat.
  • Step #22 Add vanilla bean & bay leaves.
  • Step #23 Turn off heat and allow to steep, covered, for at least 1 hr.
  • Step #24 Remove vanilla bean and bay leaves.
  • Step #25 put in the fridge sauce until time to mix into chocolate sauce.
  • Step #26 Chocolate Sauce: Bring sauce & cream to a boil in small saucepan.
  • Step #27 Pour over sliced chocolate in small mixing bowl; whisk until smooth.
  • Step #28 serve this with ganache cakes.
