Chocolate Hazelnut Cake Recipe

Ingredients
  • 6 tb Unsalted butter - ; softened
  • 1/2 c Unsweetened cocoa powder
  • 1 ts Baking soda
  • 1 ts Salt
  • 3/4 c Semisweet chocolate chips
  • 1 c Blanched hazelnuts; coarsely sliced
  • 1 c Granulated sugar
  • 2 c All-purpose flour
  • 2 lg Eggs
  • 1 tb Confectioners' sugar

Directions
  • Step #1 preheat your trusty oven to 350 degrees & butter & flour a large baking sheet.
  • Step #2 In a bowl whisk together flour, cocoa powder, baking soda, and salt.
  • Step #3 In another bowl with an electric mixer beat together butter and granulated sugar until light & fluffy.
  • Step #4 Add eggs & beat until mixd well.
  • Step #5 stir in the flour mixture to form a stiff dough.
  • Step #6 stir in the hazelnuts & chocolate chips.
  • Step #7 On prepared baking sheet with floured hands form dough into two slightly flattened logs, each 12 inches long & 2 inches wide, & Sprinkle top with confectioners' sugar.
  • Step #8 Bake logs 35 mins, or until slightly firm to the touch.
  • Step #9 Cool biscotti on baking sheet 5 mins.
  • Step #10 On a cutting board cut biscotti diagonally into 3/4-inch slices.
  • Step #11 Arrange biscotti, cut-sides down, on baking sheet & bake this until crisp, about 10 mins.
  • Step #12 Cool biscotti on a rack.
  • Step #13 Biscotti keep in airtight containers 1 week and, frozen, 1 month.
  • Step #14 This recipe yields 30 biscotti.
