Cream Of Tomato Soup Recipe

Ingredients
  • 1 onion, sliced
  • 2 tbsps all-purpose flour
  • salt to taste
  • 1 quart tomato juice
  • 2 tbsps butter
  • 2 c milk

Directions
  • Step #1 In a Dutch oven, over med-heat/flame, saute onions in butter until translucent.
  • Step #2 Remove from the heat.
  • Step #3 Stir in the flour so that no lumps remain, then slowly whisk in the tomato juice.
  • Step #4 Return to the heat & add salt to taste.
  • Step #5 Cook until just boiling but turn off the heat before it boils.
  • Step #6 Let cool 10 mins then slowly stir in the milk.
  • Step #7 Serve as soon as possible.
