Chocolate Marzipan Dates Recipe

Ingredients
  • 1 oz Semisweet chocolate
  • 2 dr Almond extract
  • 1 1/4 c Sifted powder sugar
  • Peppermint extract
  • 4 oz Marzipan
  • 2 c Ground almonds
  • 2 ts Lemon juice
  • Powder sugar
  • 1 Egg white
  • 2 sm Egg whites
  • 2 ts Sherry or brandy

Directions
  • Step #1 mix almonds & sugar in a medium bowl.
  • Step #2 Add lemon juice, sherry or brandy, & almond extract.
  • Step #3 slowly mix in enough egg white to ensure that the paste is sticky, but not wet.
  • Step #4 Knead paste until smooth on a pastry board dusted with powdered sugar.
  • Step #5 Wrap in plastic wrap.
  • Step #6 store this in refrigerator up to 4 weeks.
  • Step #7 Melt semisweet chocolate in a bowl or top of a double boiler set over a pan of shimmering water.
  • Step #8 slowly add chocolate to marzipan and knead well.
  • Step #9 If marzipan becomes dry, add 1 to 2 tsps of egg white.
  • Step #10 Flavor with a few drops of peppermint extract.
  • Step #11 (Note: I use Creme de Cocoa instead).
