Chocolate Oatmeal Cookies Recipe

Ingredients
  • 1 tb Cinnamon
  • 1 pn Pepper
  • 1 3/4 c Sugar
  • 1 ts Vanilla extract
  • 1/2 lb Whole hazelnuts or filberts
  • 1/2 lb Whole almonds
  • 1/4 ts Almond extract
  • 3/4 c Unsweetened cocoa powder
  • 1 c Water
  • 1/4 c Ground espresso coffee
  • Sugar for dusting
  • 2 tb Nut liqueur or grappa

Directions
  • Step #1 Directions: Make a strong coffee by bring water to a boil and stirring in the ground coffee.
  • Step #2 Allow to boil for a few seconds.
  • Step #3 remove this from heat & add a few spoonfuls of cold water to gather the grinds or strain.
  • Step #4 Let cool to about room temp.
  • Step #5 Toast the nuts together in a 450 degree oven for 10 mins.
  • Step #6 Remove the skins when cool.
  • Step #7 Finely chop the nuts & place this in a large bowl.
  • Step #8 Add the remaining dry ingredients to the bowl & mix well.
  • Step #9 Place the liqueur & extracts into a measuring c.
  • Step #10 Pour enough coffee into the measuring c so that it equals 1/2 c.
  • Step #11 Make a well into the nut mixture in the bowl & pour the coffee into the center.
  • Step #12 Mix together to form a tight paste.
  • Step #13 Add more coffee in small amounts if too dry.
  • Step #14 Cover a work surface with waxed paper.
  • Step #15 Working with wet hands, roll the mixture into small balls & place on paper.
  • Step #16 When all truffles are formed, dust them in a coating of sugar.
  • Step #17 Yields 40 truffles.
