Step #1 FUDGE SAUCE--- 300F g Butter 100 g Cocoa powder 120 g Dark cooking chocolate; -sliced 500 g Caster sugar 340 ml Evaporated milk For the brownie melt the butter with the chocolate but do not bring to the boil.
Step #2 Beat the eggs with the sugar until fluffy & add the brandy & vanilla essence.
Step #3 Mix the flour with the pecan nuts, add the egg mix & then the warm chocolate mix.
Step #4 mix well & fill a buttered cake tin & bake this at 170C/gas3 for 35-40 mins.
Step #5 In the meantime for the fudge sauce, melt the butter with the cocoa powder & chocolate & heat the evaporated milk with the sugar until dissolved.
Step #6 Pour the melted chocolate mix into the milk and bring to boiling point & take off the heat as soon as possible.
Step #7 It is recommended to cool the brownie before cutting into 16 pieces.
Step #8 Warm two pieces per portion in the oven for 2 mins or until brownies become soft, a microwave is ideal for this.
Step #9 Pour some hot chocolate fudge sauce on the plate & place two pieces of brownie on the sauce & Sprinkle top the plate with icing sugar and cocoa powder.
Step #10 As a nice option you can serve a scoop of vanilla ice cream with it.
