Chocolate Pecan Pie Recipe

Ingredients
  • 2 oz Unsweetened chocolate; grated
  • 6 lg Egg yolks
  • ----CAKE-------
  • 1 c Sugar
  • 1/2 c Cake flour
  • 1/2 ts Vanilla extract
  • 1/2 c Unsalted butter; room temperature
  • 1 1/2 c Pecans; toasted, finely sliced
  • 8 lg Egg whites

Directions
  • Step #1 ---GLAZE------ 5 oz Semisweet chocolate; sliced 1 oz Unsweetened chocolate; -sliced 1/2 c Unsalted butter; (1 stick) 1 tb Light corn syrup--FILLING----- 1 c Chilled whipping cream 3 tb Sugar 1 1/2 tb Bourbon 12 Pecan halves FOR CAKE: preheat your trusty oven to 350F.
  • Step #2 Butter bottom of 9-inch-diameter springform pan with 2 3/4-inch-high sides.
  • Step #3 Line pan bottom with parchment.
  • Step #4 Using electric mixer, beat butter in medium bowl until light.
  • Step #5 Add 1/2 c sugar; beat until fluffy.
  • Step #6 Add yolks 1 at a time, beating after each addition.
  • Step #7 Mix in vanilla.
  • Step #8 Add flour, mix just until mixed.
  • Step #9 Mix in pecans & chocolate.
  • Step #10 Using electric mixer fitted with clean dry beaters, beat egg whites in large bowl until soft peaks form.
  • Step #11 slowly add 1/2 c sugar; beat until stiff but not dry.
  • Step #12 Fold whites into yolk mixture in 3 additions.
  • Step #13 Transfer batter to pan.
  • Step #14 bake this until tester inserted into center comes out clean, about 55 mins.
  • Step #15 Cool on rack 15 mins.
  • Step #16 Run knife around sides of pan to loosen.
  • Step #17 Release pan sides.
  • Step #18 Cool.
  • Step #19 FOR GLAZE: mix all ingredients in top of double boiler set over simmering water (do not allow pan to touch water).
  • Step #20 Stir until smooth.
  • Step #21 Cool until lukewarm but still pourable, about 45 mins.
  • Step #22 Meanwhile, prepare filling.
  • Step #23 FOR FILLING: mix cream, sugar & bourbon in medium bowl; beat until stiff peaks form.
  • Step #24 Using serrated knife, cut cake into 3 layers.
  • Step #25 Place bottom layer on plate.
  • Step #26 Spread half of cream filling over.
  • Step #27 top this with second layer.
  • Step #28 Spread remaining filling over.
  • Step #29 top this with remaining layer, cut side down.
  • Step #30 Slowly pour glaze over cake, allowing some to drip down sides of cake.
  • Step #31 Garnish cake with pecan halves.
  • Step #32 Chill until glaze sets, about 30 mins.
  • Step #33 Serves 12.
