Chocolate Red Wine Soup With Strawberries Recipe

Ingredients
  • 1/4 c Unsweetened cocoa powder
  • 1 1/2 ts Vanilla extract
  • 1/4 ts Almond extract
  • 1/2 c Powdered sugar
  • 1 1/2 lb Tofu; silken
  • 1/3 c Graham cracker crumbs; for garnish
  • 1/2 c Seedless raspberry preserves; all-fruit
  • 8 Graham crackers; 2 1/2" x 5"

Directions
  • Step #1 Have a 6" x 10" pan ready.
  • Step #2 Spread the graham crackers with the raspberry preserves.
  • Step #3 Cut the tofu into chunks.
  • Step #4 Place 1/2 the chunks in a mixer; process until smooth.
  • Step #5 Spoon into a bowl & repeat with remaining tofu.
  • Step #6 mix in sugar, cocoa powder & extracts.
  • Step #7 Mix well.
  • Step #8 In the pan, preserves-side up, layer as follows: Place 4 of the graham crackers, in the bottom of the pan.
  • Step #9 top this with half of the chocolate tofu mixture.
  • Step #10 Repeat.
  • Step #11 Sprinkle top the graham cracker crumbs on top.
  • Step #12 Cover & chill thoroughly.
  • Step #13 Serve cold.
  • Step #14 A few notes on this one: First of all, as you are mixing the tofu mixture, taste it to make sure it is sweet enough & chocolatey enough; adjust to suit your taste.
  • Step #15 You can also use the melted chocolate chip method that Robin mentioned.
  • Step #16 The chocolate chip method is richer & more like chocolate mousse; the cocoa & powdered sugar method is more subtle.
  • Step #17 Secondly, this trifle can be made ahead & put in the fridged.
  • Step #18 If you do make it ahead, the graham crackers will lose all their crispness; this is not necessarily a bad thing.
  • Step #19 The graham crackers are really just there as a carrier for the raspberry jam anyway! But if you feel you want the contrast in textures of crisp graham cracker under creamy chocolate, just assemble the trifle closer to serving time.
