Chocolate Sandies Recipe

Ingredients
  • 1 tb Baking powder
  • 1 c Mixed dried fruit;
  • 50 g Sweet biscuit crumbs
  • 6 Eggs
  • 1 ts Vanilla extract
  • 3 tb Cocoa
  • 80 ml Milk
  • 1/2 c Sugar
  • 2 c Plain flour
  • 200 g Butter or margarine
  • 1/2 c Brown sugar

Directions
  • Step #1 Generously butter a non-stick fluted cake tin & Sprinkle top the biscuit crumbs all over the buttered area.
  • Step #2 Preheat the oven to 170c.
  • Step #3 & set aside.
  • Step #4 Slowly melt the butter or margarine.
  • Step #5 Meanwhile, beat the eggs & sugars together until the mixture is very thick & pale, using an electric mixer, about 8 mins.
  • Step #6 With the motor still running, add the melted butter to the egg mixture in a thin stream & continue beating until all the ingredients are mixd.
  • Step #7 In a separate bowl, mix the flour, baking powder & cocoa together.
  • Step #8 mix the egg mixture, the flour mixture, the vanilla extract and the milk with a wooden spoon, continuing to mix until the batter is smooth.
  • Step #9 Add the dried fruit & mix briefly to distribute.
  • Step #10 Pour the batter into the prepared tin then bake the cake at 170c.
  • Step #11 for 40 mins.
  • Step #12 allow this to cool for a few mins in the tin, then turn out onto a wire rack & cool.
  • Step #13 Sprinkle top with a little icing sugar if desired.
