1 oz Bittersweet chocolate bar; thin, such as Lindt
1/2 ts Vanilla extract
Mint; for garnish
2 ts Sugar; or to taste
1 tb Milk
2 lg Eggs; beaten lightly
Confectioners' sugar; for dusting
Directions
Step #1 Break chocolate into 2 pieces.
Step #2 In a bowl whisk together eggs, vanilla, & milk.
Step #3 Using a 3-inch heart shaped cutter cut a heart shape from each slice of bread.
Step #4 Place a piece of chocolate on top of one of the pieces of bread & carefully press another piece on top, pinching the edges.
Step #5 Repeat the procedure with other 2 pieces of bread.
Step #6 Dip bread into egg mixture, making sure they are soaked.
Step #7 Heat the butter in a non-stick skillet over moderate heat until it begins to foam, add the stuffed bread hearts & cook them, turning them once for 2 to 3 mins per side or until they are nicely browned.
Step #8 In a bowl mash 3/4 of the raspberries & stir in the the sugar.
Step #9 stir in the the remaining berries.
Step #10 Transfer the browned hearts to a plate & top with the raspberries.
Step #11 Dust with confectioners' sugar & garnish with mint.
