Chocolate Toffee Matzot Recipe

Ingredients
  • 1 1/2 c Crushed chocolate-covered English toffee;
  • 1/2 c Unsweetened cocoa
  • 1/2 c sliced almonds
  • 1 c Plus 2 tbsps sugar
  • 1 tb Dark rum
  • 1 lg Egg
  • 1/2 c Unsalted butter; room temperature
  • 1 c All purpose flour
  • 1 ts Vanilla extract
  • 1/4 ts Salt
  • 1/2 ts Baking soda

Directions
  • Step #1 preheat your trusty oven to 350F.
  • Step #2 Beat butter & sugar in large bowl until fluffy.
  • Step #3 Add egg, rum & vanilla & beat until well mixed.
  • Step #4 Sift flour, cocoa, baking soda & salt into small bowl.
  • Step #5 Stir dry ingredients into butter mixture.
  • Step #6 Mix in toffee & sliced almonds.
  • Step #7 Drop batter by heaping tbspfuls onto heavy large ungreased baking sheet, spacing 2 inches apart.
  • Step #8 bake this until cookies puff slightly & crack on top but are still soft to touch, about 11 mins.
  • Step #9 Let cookies cool on sheet 1 min.
  • Step #10 Transfer cookies to rack & cool completely (cookies will become crisp).
  • Step #11 Repeat shaping and baking with remaining batter.
  • Step #12 (Can be prepared 2 days ahead.
  • Step #13 store this in airtight container at about room temp.
