Chocolate Tower, Cardamom Snow Egg And Mindey Orange Sauc Recipe

Ingredients
  • 1 c Heavy Cream; whipped
  • 1 ts Vanilla Extract
  • 5 lg Eggs;
  • 3 tb Butter
  • 4 oz Unsweetened Chocolate; cut into chunks
  • 6 tb Cake Flour
  • 1 tb Hot Water
  • 1/4 ts Salt
  • 3/4 Confectioner's Sugar; divided
  • 1/2 ts Baking Powder
  • 3/4 c Granulated Sugar

  • Step #7 Pre-heat oven to 400-F degrees & line an 11-inch by 16-inch baking pan with wax paper.
  • Step #8 Melt the chocolate in a double boiler over med-heat/flame.
  • Step #9 Stir until smooth.
  • Step #10 In a mixing bowl, beat 4 egg whites with an electric mixer until stiff peaks begin to form.
  • Step #11 Add the sugar slowly while continuing to beat until glossy peaks form.
  • Step #12 Fold in four well-beaten egg yolks.
  • Step #13 Sift the cake flour together with the salt & baking powder.
  • Step #14 carefully fold the dry ingredients into the egg white mixture.
  • Step #15 Fold in half of the melted chocolate & all of the vanilla extract.
  • Step #16 Spread the mixture thinly over the prepared baking pan.
  • Step #17 Bake for about 15 mins.
  • Step #18 Sprinkle top a clean pastry cloth with confectioner's sugar.
  • Step #19 Turn the thin cake carefully out onto the powdered sugar & trim the edges for uniform layering.
  • Step #20 Remove the wax paper & let the cake cool.
  • Step #21 While the cake is cooling, whip the heavy cream with an electric mixer.
  • Step #22 Cut the cooled cake into 4 equal pieces.
  • Step #23 Top three of the pieces with a layer of whipped cream.
  • Step #24 Stack three of the whipped-cream-covered cake pieces on top of each other, & top this with the plain piece of cake.
  • Step #25 mix the remaining melted chocolate with 1/2 c confectioner's sugar & the tbsp of hot water in a double boiler.
  • Step #26 mix the mixture well & remove this from the heat.
  • Step #27 Temper the mixture with a slightly beaten whole egg & butter.
  • Step #28 Keep stirring the warmed chocolate to dissolve all the ingredients.
  • Step #29 Spread the chocolate sauce on the top & sides of the chocolate torte.
  • Step #30 put in the fridge if you are not serving as soon as possible.
