Chocolate, Chocolate Mousse Layer Cake With Vanilla Bean Recipe

Ingredients
  • 1 lb Butter
  • 11 Eggs yolks
  • 2 tb Grand Marnier
  • 11 Egg whites; beaten until stiff
  • 1 lb Bittersweet chocolate; sliced
  • Whipped cream; for garnish
  • 1 3/4 c Sugar
  • sliced mint; for garnish
  • 2 c White chocolate sauce; warm

Directions
  • Step #1 Preheat the oven to 300F degrees.
  • Step #2 Butter & flour a 12-inch springform pan.
  • Step #3 In a double-boiler, over med-heat/flame, melt the chocolate & butter together.
  • Step #4 stir in the the Grand Marnier.
  • Step #5 remove this from the heat & cool to about room temp.
  • Step #6 In an electric mixer, on medium speed, beat the egg yolks until pale yellow & ribbon like, about 6 to 8 mins.
  • Step #7 During the last 2 mins, add the sugar in a steady stream.
  • Step #8 With the machine running slowly add the chocolate mixture & mix until all of the chocolate is incorporated.
  • Step #9 Fold in the stiff egg whites.
  • Step #10 Pour the batter into the prepared pan.
  • Step #11 Place the pan on the rack, in the center of the oven.
  • Step #12 Bake the cake for about 1 1/2 to 2 hrs or until the center of the cake comes out clean with a toothpick.
  • Step #13 Remove the cake from the oven & place on a wire rack.
  • Step #14 Cool the cake for 15 mins.
  • Step #15 Remove the sides of the pan & cool completely.
  • Step #16 Invert the cake onto a serving plate.
  • Step #17 The cake can be served warm or can be placed in the refrigerator & chilled.
  • Step #18 Slice the cake into 16 slices & serve the cake with the white chocolate sauce, whipped cream & mint.
  • Step #19 This recipe yields 16 servings.
