Ingredients
1/2 c Milk
1 1/2 c All purpose flour
3 1/2 oz Almond paste; broken into pieces
----CAKE-------
1/2 c Unsalted butter; room temperature
1/4 ts Salt
1 ts Imitation coconut extract
4 lg Eggs; separated
1 1/4 c Sugar
1 c Sweetened shredded coconut
Directions
Step #1 --FILLING----- 1/2 c Canned cream of coconut; -(such as Coco Lopez) 1/4 c Unsalted butter; (1/2 stick) 3 oz Imported white chocolate; -(such as Lindt), ; sliced 2 tb Cream cheese; room -temperature 3/4 c Sweetened shredded coconut---GLAZE------ 1 c Whipping cream 3 tb Light corn syrup 12 oz Bittersweet; (not -unsweetened) or ; semisweet ; chocolate, sliced Sliced almonds; toasted For cake: preheat your trusty oven to 325F.
Step #2 Butter & flour 9-inch-diameter cake pan with 2-inch-high sides.
Step #3 Using electric mixer, beat 1 c sugar, almond paste & butter in large bowl to mix.
Step #4 Add yolks, extract & salt & beat 1 min.
Step #5 On lowish speed, beat in flour alternately with milk in 3 additions each.
Step #6 Mix in coconut.
Step #7 Using electric mixer fitted with clean dry beaters, beat whites in large bowl to soft peaks.
Step #8 slowly beat in remaining 1/4 c sugar & beat until stiff but not dry.
Step #9 Fold whites into batter.
Step #10 Pour batter into prepared pan.
Step #11 bake this until tester inserted into center comes out clean, about 1 hr.
Step #12 Cool cake in pan on rack 20 mins.
Step #13 Run small sharp knife around sides to loosen cake.
Step #14 Turn out cake onto rack; cool completely.
Step #15 For Filling: Bring cream of coconut & butter to simmer in heavy medium saucepan over low heat/flame.
Step #16 Add white chocolate; stir until melted.
Step #17 pour this into bowl & cool.
Step #18 Add cream cheese & beat until smooth.
Step #19 Mix in coconut.
Step #20 Chill until spreadable, about 30 mins.
Step #21 For Glaze: Bring 3/4 c cream & corn syrup to simmer in heavy medium saucepan.
Step #22 Add chocolate & stir until melted & smooth.
Step #23 Cool until just pourable, about 15 mins.
Step #24 Using serrated knife, cut cake horizontally in half.
Step #25 Place 1 cake layer cut side up on plate.
Step #26 Spread filling over.
Step #27 top this with second cake layer cut side down.
Step #28 Pour half of glaze over top of cake, spreading with spatula to cover sides & smooth top (reserve remaining glaze for sauce).
Step #29 Press almonds around sides & in 1-inch border around top edge of cake.
Step #30 put in the fridge cake until glaze sets, about 1 hr.
Step #31 (Can be made 1 day ahead.
Step #32 Cover cake with cake dome; chill.
Step #33 Chill remaining glaze.
Step #34 Let cake stand 2 hrs at about room temp before continuing.
Step #35 ) Mix reserved glaze & remaining 1/4 c cream in saucepan.
Step #36 Stir over low heat until sauce is heated through.
Step #37 Slice cake; serve this with sauce.
Step #38 Serves 10.
