Chocolate-pine Nut Meringue Smoothies Recipe

Ingredients
  • 6 oz Chocolate chips; semi-sweet
  • 1 pk Gelatin; unflavored
  • 1 Chocolate crumb crust; 9"
  • 1 c Peanut butter; creamy or chunky
  • 2 Eggs
  • 1 1/4 c Milk
  • 1/2 c Sugar
  • 1/2 c Whipping or heavy cream
  • 1/4 c Water; cold

Directions
  • Step #1 In small saucepan, Sprinkle top gelatine over cold water; let this stand 1 min.
  • Step #2 Stir over low heat/flame until gelatine is dissolved.
  • Step #3 In mixer or food processor/blender, sugar, milk, process peanut butter, & eggs.
  • Step #4 While processing, slowly add gelatine mixture until mixed.
  • Step #5 pour this into crust; chill until almost set.
  • Step #6 In small saucepan, bring cream to the boiling point.
  • Step #7 remove this from heat; stir in the chocolate chips until melted.
  • Step #8 let this stand 3 mins.
  • Step #9 Slowly pour over pie & spread to edges; chill until firm.
  • Step #10 Garnish with white or dark chocolate curls.
