Chopped Summer Salad Recipe

Ingredients
  • 1/4 c Kalamata or other brine-cured black; pitted and sliced olives, coarse
  • 1 1/2 tb Red-wine vinegar
  • 1 Cucumber; peeled & cut into 1/2-inch pieces
  • 1 Pita loaf; cut into 1/2-inch pieces
  • 1/2 Yellow bell pepper; cut into 1/2-inch pieces
  • 1/2 Red onion; cut into 1/2-inch pieces
  • 1/3 c Crumbled feta;
  • 2 tb Extra-virgin olive oil
  • 1 sm Head romaine; washed well, dried, & cut into 1/2-inch pieces
  • 1 1/2 tb Olive oil
  • 1/2 Red bell pepper; cut into 1/2-inch pieces

Directions
  • Step #1 In a skillet heat olive oil over moderate heat until hot but not smoking & cook pita, stirring every once in awhile, until golden.
  • Step #2 Spice up croutons with salt & pepper to taste & transfer to paper towels to drain.
  • Step #3 In a large bowl mix romaine, onion, cucumber, feta, bell peppers, & olives & drizzle with extra-virgin olive oil & vinegar.
  • Step #4 Add croutons & salt & pepper to taste & toss to mix.
  • Step #5 Yield: 2 servings.
