Chorizo Crusted Scallops Recipe

Ingredients
  • 1/2 lb Chorizo; sliced
  • Freshly-ground black pepper; to taste
  • 1 c sliced onions
  • 1 Egg; lightly beaten with
  • 1 tb sliced garlic
  • 1 ts Water; for egg wash
  • 1 Recipe Basic Bread Dough For Stuffed Bread; see Note
  • 1 tb Olive oil
  • Salt; to taste

Directions
  • Step #1 Note: See the ?Basic Bread Dough For Stuffed Bread? recipe which is included in this collection.
  • Step #2 Grease a baking sheet.
  • Step #3 In a skillet heat oil over medium-high heat.
  • Step #4 Add chorizo, onions & garlic & cook, until chorizo is browned & onion is tender, stirring, about 8 mins.
  • Step #5 Transfer to a small bowl & let cool completely.
  • Step #6 Taste & adjust Spice uping with salt & pepper, if needed.
  • Step #7 On a lightly-floured work surface, stretch bread dough into a rough circle.
  • Step #8 Using a strainer, drain any excess fat from chorizo mixture, then mound in center of dough.
  • Step #9 Pull sides of bread up over sausage to completely enclose, squeezing out any air pockets.
  • Step #10 Pinch edges together to seal.
  • Step #11 Knead lightly to distribute chorizo evenly throughout loaf & form into a round peasant shape.
  • Step #12 Transfer to baking sheet, seam-side down, & let rise until doubled, about 40 mins.
  • Step #13 preheat your trusty oven to 400F degree.
  • Step #14 Using a razor or serrated knife, cut a shallow "X" in center of dough, & brush with egg wash.
  • Step #15 Bake bread until brown & firm, about 30 mins.
  • Step #16 Let bread cool in pan on a rack 20 mins, then turn out & let cool.
  • Step #17 Serve warm or at about room temp.
