Christmas Apple Pie Recipe

Ingredients
  • 1 1/2 c Chocolate chips
  • 1 lb Butter
  • 1 1/2 c Raw walnuts; finely sliced
  • 1 1/2 c Semisweet chocolate chips
  • 1 1/2 c Whole raw unblanched almonds
  • 2 1/2 c Sugar

Directions
  • Step #1 Melt butter & sugar in large, heavy saucepan over high heat, stirring until mixture foams vigorously.
  • Step #2 Reduce heat to low & stir 5 mins.
  • Step #3 Increase heat to high & add almonds, about 5 mins, stirring until nuts begin to pop, then reduce heat.
  • Step #4 Continue to cook 7 mins.
  • Step #5 Candy should caramelize slowly to medium-brown color.
  • Step #6 If candy darkens too quickly, remove this from heat but continue to stir 7 mins.
  • Step #7 Pour candy into 15- by 10-inch jellyroll pan.
  • Step #8 Let cool.
  • Step #9 Melt chocolate chips in top of double boiler over simmering water.
  • Step #10 Spread half of chocolate over candy, then Sprinkle top with 3/4 c sliced walnuts.
  • Step #11 Cool, then flip candy over.
  • Step #12 Coat other side with remaining chocolate & Sprinkle top with remaining nuts.
  • Step #13 Break into pieces when cool.
  • Step #14 store this in airtight container.
  • Step #15 Yields 1 1/2 lbs, about 60 pieces.
