Christmas Pudding Fritters Recipe

Ingredients
  • 1/4 c Candied orange peel
  • 1/4 c Candied lemon peel
  • 1/2 ts Ground cinnamon
  • 1/3 c Sugar
  • 2 c Sifted flour
  • 3 Eggs; separated
  • Hard Sauce; optional
  • 1/2 ts Grated nutmeg
  • 1 1/4 c Seeded raisins; sliced fine
  • 1/4 c Blanched almonds; sliced
  • 1 1/4 c Currants
  • 1/2 c Butter; plus extra
  • 1 c Milk
  • 2 tb Cold water
  • 1/2 lb Solid beef fat trimmings
  • 1/4 ts Salt
  • Juice of 1 lemon
  • Juice of 1 orange
  • 1/2 ts Ground cloves
  • 1/4 ts Baking soda
  • 1/3 c Shredded candied citron

Directions
  • Step #1 Cut candied lemon & orange peel into thin strips.
  • Step #2 mix currants, raisins, almonds, candied citron, & candied lemon & orange peels.
  • Step #3 Coat with 1/4 c sifted flour.
  • Step #4 Add beef fat trimmings & mix again.
  • Step #5 Set aside.
  • Step #6 Beat egg yolks until smooth in separate bowl.
  • Step #7 Beat egg whites until stiff in separate bowl.
  • Step #8 Dissolve baking soda in cold water.
  • Step #9 Cream butter & sugar by beating until light & fluffy in another bowl.
  • Step #10 Add beaten egg yolks.
  • Step #11 stir in the milk.
  • Step #12 Then stir in the stiff egg whites alternately with remaining 1 3/4 c sifted flour.
  • Step #13 Add cinnamon, orange juice, salt, nutmeg, cloves, lemon juice and dissolved baking soda.
  • Step #14 stir in the flour-coated fruit mixture.
  • Step #15 Grease 1 1/2 quart pudding mold with butter.
  • Step #16 Fill with pudding & cover tightly.
  • Step #17 Set in pot & add boiling water to 1/2 way up side of mold.
  • Step #18 Keep water at simmer, topping up as needed, 3 hrs.
  • Step #19 Let cool, turn out of mold, decorate with sprigs of holly & serve this with Hard Sauce.
  • Step #20 Yields 12 servings.
  • Step #21 Each serving without Hard Sauce: 415 calories; 176 mg sodium; 85 mg cholesterol; 25 grams fat; 43 grams carbohydrates; 6 grams protein; 0.
  • Step #22 85 gram fiber.
