Step #1 --TART MIX----- 2 Eggs 3 oz Caster sugar 1 oz Plain flour 3 tb Double cream 2 oz Left over Christmas pudding To make the pastry, mix together the icing sugar & butter.
Step #2 Rub in the flour to form a crumb.
Step #3 Add the eggs & bind the pastry together.
Step #4 Rest in the fridge for 20 mins.
Step #5 Roll out the pastry & line a 4 inch buttered muffin ring.
Step #6 Leave in the fridge to rest for 2-3 hrs.
Step #7 To make the tart mix, beat together eggs & sugar, add the cream then add the flour to resemble a batter-type mixture.
Step #8 Cook the pastry case blind, then add the crumbled left over Christmas pudding.
Step #9 Pour over the tart mix & return to the oven.
Step #10 Cook for about 20 mins on 120C/gas 5 or until golden brown.
Step #11 Dust with caster sugar & serve this with vanilla ice cream.
