Christmas Tree Rolls Recipe

Ingredients
  • 8 oz Small black grapes
  • 3 tb Water
  • 1 tb Silver balls
  • 1 Star fruit
  • 2 tb Icing sugar;
  • 1 Large; ripe honeydew melon
  • 1 tb Hundreds & thousands;
  • 1 tb Cr?me de cassis; , optional
  • 1 lb Fresh or frozen cranberries

Directions
  • Step #1 To make the coulis, bring to the boil & boil for approximately 1 min, sugar & cassis, place this in a saucepan, liquidise the cranberries with the water, until glossy.
  • Step #2 Leave to cool.
  • Step #3 To make the trees, cut the melon into three equal lengthwise wedges.
  • Step #4 Scoop out seeds.
  • Step #5 Then cut each wedge in half, crosswise to give 6 triangular shaped wedges which will each make one tree.
  • Step #6 For each tree, take a piece of melon & make 4 cuts down to the skin, parallel to the curved side.
  • Step #7 Using a curved, serrated (grapefruit) knife, remove the flesh from the skin to give 4 curved slices & one little pointed bit.
  • Step #8 Lay the largest slice flat near the bottom of the plate, curving away from you so that it forms the bottom of the tree.
  • Step #9 Lay the second largest slice flat on the plate, cped against the first slice to form the next layer of branches & so on, graduating to the pointed bit which forms the top of the tree.
  • Step #10 Spoon the coulis around the tree.
  • Step #11 Place a slice of star fruit at the top of the tree, & decorate the tree with halved grapes.
  • Step #12 Just before serving, Sprinkle top tree with hundreds & thousands and silver balls.
  • Step #13 Serve on large plain plates.
