Colleen's Slow Cooker Jambalaya Recipe

Ingredients
  • 1 large onion, sliced
  • 1/2 tsp dried thyme
  • 2 tsps dried oregano
  • 2 tsps Cajun seasoning
  • 1 lb frozen cooked shrimp without tails
  • 1 (28 oz) can sliced tomatoes with juice
  • 1 large green bell pepper, sliced
  • 2 tsps dried parsley
  • 1 lb skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 1 c chicken broth
  • 1 tsp cayenne pepper
  • 1 lb andouille sausage, sliced
  • 1 c sliced celery

Directions
  • Step #1 In a slow cooker, celery, onion, tomatoes with juice, green bell pepper, mix the chicken, sausage, & broth.
  • Step #2 Spice up with oregano, cayenne pepper, parsley, Cajun seasoning, & thyme.
  • Step #3 Cover, & cook 7 to 8 hrs on Low, or 3 to 4 hrs on High.
  • Step #4 Stir in the shrimp during the last 30 mins of cook time.
