Cilantro Aioli Recipe

Ingredients
  • 1 1/2 ts Serrano or Poblano peppers
  • 3 tb Raw pumpkin seeds
  • 1/2 ts Ground coriander
  • 2 tb Lime juice
  • 1/2 c Loosely-packed parsley leaves
  • 1 c Loosely-packed cilantro leaves
  • 1/4 c Vegetable oil
  • 1 ts Salt
  • 2 tb Rice wine vinegar
  • 1/4 c Loosely-packed mint leaves

Directions
  • Step #1 In a work bowl of your food processor/blender, vinegar, cilantro, mint, place the parsley, lime juice, coriander, pumpkin seeds, Serrano peppers, & salt.
  • Step #2 Process until a paste is formed, about 1 min.
  • Step #3 Scrape down the sides of the food processor/blender, & then process again, while slowly pouring the oil in through the feeder tube.
  • Step #4 Transfer to a bowl, & chill for 20 mins.
  • Step #5 Serve atop fish & fresh greens.
  • Step #6 This recipe yields about 3/4 c of sauce.
