Cinnamon Pecan Sticky Buns Recipe

Ingredients
  • 1 tb Packed brown sugar
  • 1 1/4 c Pecan halves
  • 1 ts Ground cinnamon
  • 4 Cinnamon sticks
  • 1 ts Vanilla extract
  • 1 1/2 c Crema; see Note
  • 2 1/2 c Milk
  • 1 c Packed brown sugar; plus
  • 8 lg Egg yolks
  • 1 pn Salt

Directions
  • Step #1 Note: See the "Crema" recipe which is included in this collection.
  • Step #2 In a large bowl whisk together the egg yolks & brown sugar until thick & pale brown.
  • Step #3 In a saucepan mix the milk & cinnamon stick.
  • Step #4 Bring to a boil.
  • Step #5 remove this from the heat.
  • Step #6 Stir 1/2 c of the milk into the egg mixture, then whisk the eggs into the pan of milk.
  • Step #7 Set aside to cool.
  • Step #8 Pass the custard mixture through a medium strainer.
  • Step #9 Add the vanilla extract, ground cinnamon, salt & Crema.
  • Step #10 Whisk well & put in the fridge until cold.
  • Step #11 preheat your trusty oven to 350 degrees.
  • Step #12 Spread the pecans on a baking sheet & toast until golden brown and fragrant, about 10 mins.
  • Step #13 Set aside to cool & then roughly chop.
  • Step #14 Pour the chilled custard mixture into your ice cream maker and process according to the manufacturer's instructions.
  • Step #15 Fold in the cooled toasted pecans.
  • Step #16 store this in the freezer.
