Cinnamon Pound Cake Recipe

Ingredients
  • 1 tb sliced fresh parsley
  • 1 pn Cinnamon powder
  • 290 ml Pasteurised milk;
  • 4 Green tomatoes
  • 100 g Butter;
  • 2 140 g; pieces of smoked haddock
  • 1 Bay leaf
  • Salt & freshly ground black pepper

Directions
  • Step #1 First thing to do is cut the tomatoes into thickish slices, about 4 slices per tomato.
  • Step #2 Then place the milk, cinnamon & bay leaf into a pan with the fish & cover with a lid.
  • Step #3 Bring to the boil & let simmer slowly for about 2 or 3 mins, depending on the thickness of the fish.
  • Step #4 Then turn the heat off & remove the lid.
  • Step #5 Leave to stand a while, as you cook the tomatoes.
  • Step #6 To do this place 1/2 the butter into a saut? pan & add the tomatoes together with some salt & pepper.
  • Step #7 Saut? quickly until golden brown & remove, divide between two plates.
  • Step #8 Return the pan to the heat and add the remaining butter & the choppped parsley.
  • Step #9 Spice up & place the fish on the tomatoes, pour over the juices from the pan.
