Cinnamon Spiced Northwest Pear Fritters Recipe

Ingredients
  • 1/4 c Brown sugar
  • 1/2 c Raisins
  • Cooking spray or oil
  • Cinnamon Soy Frosting;
  • 4 ts Active dry yeast;
  • 1 1/2 c Warm water
  • 2 tb Wheat gluten
  • 3 c Unbleached white flour
  • 4 oz Firm tofu
  • 1 ts Salt
  • 1 tb Sugar
  • 1 c Soy flour
  • Cinnamon

Directions
  • Step #1 1.
  • Step #2 In a large mixing bowl, gluten, stir this together flours, yeast, sugar, & salt to distribute evenly.
  • Step #3 2.
  • Step #4 In a small bowl, mash tofu with a fork & whisk together with water-a few small lumps are okay.
  • Step #5 Make a well in the center of dry ingredients, pour in tofu mixture, & stir this together quickly to mix.
  • Step #6 Knead slightly with back of spoon, just to mix ingredients well & moisten all the flour.
  • Step #7 Transfer to a container with ample space for rising & a tight fitting lid (or use a gallon size sealable bag) & put in the fridge ove 8 equal pieces & place, spiral side up, on prepared sheet.
  • Step #8 (If you prefer single rolls, place about 3 inches apart; for pull-apart bunches, place about 1/2 inch apart.
  • Step #9 ) Cover with a cloth & set aside to rise In a warm place, about 40 mins.
  • Step #10 4.
  • Step #11 preheat your trusty oven to 400~ & bake about 20 mins, until golden brown.
  • Step #12 Transfer to a rack to coo' a bit before frosting, if desired.
