Citrus-shrimp Salad Recipe

Ingredients
  • 1/2 ts Light soy sauce
  • 1 3/4 c Light or dark chicken stock
  • 2/3 c Fresh grapefruit juice
  • 1/2 c Sugar
  • 2 c Heavy cream

Directions
  • Step #1 mix the stock, grapefruit juice, & sugar in a shallow heavy-bottomed saucepan.
  • Step #2 Cook to the caramel stage; there will be wisps of smoke coming from the center of the pan.
  • Step #3 Carefully whisk in the cream.
  • Step #4 Allow the mixture to boil & deepen in color.
  • Step #5 Reduce the mixture to 1 or 1 1/2 c, whisking constantly.
  • Step #6 When it is caramel-dark, add the soy sauce.
  • Step #7 Strain through a fine-mesh strainer & reserve.
  • Step #8 This recipe yields 1 to 1 1/2 c of sauce.
