Clafouti With Raisins Recipe

Ingredients
  • 1 c Heavy cream
  • 2 Cinnamon sticks
  • 1/2 Vanilla bean
  • 1 tb All-purpose flour
  • 1 pt Blueberries
  • 3/4 c Sugar
  • 1 pt Raspberries
  • 1 Prebaked tart shell;
  • 6 Eggs
  • 1 1/2 c Milk
  • 1 ts Minced lemon zest

Directions
  • Step #1 Heat milk & cream with vanilla bean & cinnamon sticks.
  • Step #2 Scald and let cool, then strain out vanilla bean & cinnamon sticks.
  • Step #3 Into strained mixture, whisk in flour, sugar, eggs & lemon zest and transfer mixture to a pitcher or a pour spout.
  • Step #4 Assemble berries in pre-baked, room-temperature tart shell.
  • Step #5 Raspberries should be top down (with opening down).
  • Step #6 Tightly packed but only one layer of fruit.
  • Step #7 Pour just enough batter over berries to almost come up even with fruit.
  • Step #8 Be careful not to put too much, but enough to fill in all the spaces & come 5/6ths of the way up the berries.
  • Step #9 Bake 15 to 20 mins at 350 degrees until set & slightly brown on top.
